In southern Apulia, Primitivo di Manduria is born. A pleasant feeling of warmth will be felt during tasting, accompanied by a light note of acidity, saltiness and slight tannicity.

It comes from southern Apulia, part of the province of Taranto and Brindisi.
Vinification is traditional with daily pumping over for the first week and every other day for the second week of fermentation. The fermentation temperature is set between 24°C and 28°C. After alcoholic fermentation is finished, racking and soft pressing of the skins, the best conditions are set for the start of malolactic fermentation.
Primitivo di Mandura is aged in wooden barrels.
